To navigate in all this is not easy: popular ratings like Zagat are traditionally nonsense, local food blogs do not have time to keep track of developments, with a Michelin rating in Los Angeles in general is a funny story. It was published for several years in the mid-noughties, in 2010 it stopped coming out; the official reason was called “the economic situation”, although there is another version. It was reported that the editor-in-chief of the respective guides, Jean-Luc Nare, said the following: “In Los Angeles, people don’t choose a restaurant by the number of Michelin stars, but by the number of stars sitting in the restaurant.” Which, of course, is not true-no one in Los Angeles cares about Michelin stars, or just stars, or more or less about anything else.

Be that as it may, the question of choosing a restaurant here boils down to a somewhat barbaric formula. You have to answer yourself the question, “What do you want tonight?” – and then move in the chosen direction. Ethnic cuisines are the easiest: go to Koreatown for kuksa, Little Tokyo for sashimi, Culver City for Brazilians, and Van Nuys Boulevard for pho soup, where many Vietnamese live. Shish kebab and lulas in as authentic an atmosphere as possible should be eaten in Armenian Glendale. There is no such term as “Mexican food” strictly speaking – it has more regional subspecies than Chinese food; any of them in Los Angeles, which is an hour away from Mexico, is not a problem to find. Nuevo Leon cuisine is gaining strength now (see bone marrow tacos), and carne asada made by natives of Sonora, Baja California and other northern Mexican states is also becoming popular. You could take months to figure it all out, or you could just walk into any ethnic restaurant at random (avoiding tourist areas, of course – it’s all wrong there) and make no mistake. And yes, speaking of stars, Danny Trejo recently opened Trejo’s Tacos on La Brea Boulevard with his own face on the logo. The first week there were queues; pretty quickly everyone agreed that the artist’s tacos were good for three. As, in fact, are the roles in the movies lately.

There is also such a phenomenon as food trucks. Unlike, for example, Manhattan, where they make sense simply because it’s crowded, there are a lot of people, and eating in the same places gets boring, Los Angeles has them simply because it’s impossible not to have something. You can’t miss at least Chef Roy Choi’s Korean fusion tacos Kogi, which started the whole street food phenomenon in general; Yeastie Boys’ fantastic bagel wagon; breakfast specialty Free Range LA and the phenomenal sausage shop on wheels Seoul Sausage Co. whose owners Chris Oh, Young Kim and Ted Kim have become culinary stars on a national scale.

Let’s keep silent about the world-famous Matsuhisa (the only name restaurant of the Nobu owner) and Urasawa (with three-star Michelin chef Hiro Urasawa), where the bill without wine can easily exceed three hundred dollars per person – the fact that it is cosmically delicious is clear by default. But it’s worth mentioning two non-obvious places known only to locals and not unreasonably considered to be the best sushi bars not only in Los Angeles, but in America as a whole. The first is Shibuya in Calabasas; you can’t book a table there and it’s better to arrive at noon, by opening time, to avoid standing in a three-hour line with Kanye West and Justin Bieber who live nearby. Shibuya does absolutely spacey stuff with tuna, and their black cod is a head-turner above Nobu. The second one is Yotsuya in Tarzana, where everything is interesting. The menu is fundamentally no. They don’t make “California” roll as a matter of principle and if you mention it they can easily kick you out as for a Japanese it sounds almost as weird as lard in chocolate. You can bring your own wine. Chef Masatomo cooks only what he bought in the morning at the aforementioned Downtown Fish Market, and so the omakase set may consist of ten different dishes, or it may consist of eighteen. It is impossible to describe the taste of it all in words; it is an experience of religious enlightenment. And yes: even in such non-obvious places, you should prepare to pay at least a hundred dollars per person. Cheap sushi is an oxymoron.

Then there are the burgers. One of California’s most important gastronomic institutions is the In-n-Out Burger chain, which only pretends to be fast food. There are three items on the menu there, but only commuters order them; the whole point is that the burgers here are made to order by individual request (just in case: you should order a triple-triple without onions, but with extra pickles, just take my word for it). All the chefs of the world stop by In-n-Out right off the plane; this is where the entire film industry comes after the Oscars and the Golden Globes – finally a proper meal after a silly buffet. Needless to say, the burgers here are unlike anything you can try outside of California at all?

And so on and so forth. There are several volumes to be written about food in Los Angeles, and they will become irrelevant in no time – the gastronomic landscape is changing at an unimaginable rate.

There’s no such thing as someone sitting down and having coffee.

I’m not talking about restaurants specifically. Naturally, restaurants are fine. But if we’re talking about some common inexpensive cafes, here in most cases it’s just awful: just some iron tables and chairs, it’s often dirty, some small incomprehensible place.

In America people often order take-out food. That is you call on the phone or you come and say: “I want to order for to go”, and you order from the menu and they pack it in boxes and give you plastic spoons and forks if you want, and you take it away and you eat it at home or in the office somewhere.

101 Coffee House
Atmosphere: A playful marquee in front is the only hint that the square Best Western is home to 101 Coffee House, a vibrant mid-century tradition. A decades-old eatery, by all accounts, had not aged so gracefully until a 2001 renovation brought it back to the ’60s. The results are stunning: spherical pendant lights along the back stone wall, and natural light floods in against the earth-toned blue tiles. The modern playlist and Hollywood clientele keep the vibe cool, but in every other aspect it’s a time warp.

Dining: You’ll pay a pretty penny for a meal at Restaurant 101 (in diner terms), but there are some specialty dishes. Breakfast is served all day, and you’d be wise to order the Mikey Fitz: two eggs, two slices of bacon or sausage, and three silver pancakes or one slice of French toast; we recommend the sausage, generously spiced and not too greasy. The sandwiches have a southern slant (po-boys and blackened catfish abound), but a solid choice is the BLT, which comes with a mix of crispy sweet potatoes and regular fries. Save room for the 50/50 cocktail, made with orange sherbet and vanilla ice cream. As we noted during a recent visit: “It tastes more like buttercream than buttercream.” And that’s a good thing.

Foxy’s restaurant
Atmosphere: Foxy’s wooden A-frame sets it apart, stylistically speaking, from most other retro eateries in Los Angeles. The dark wooden planks of this Glendale restaurant, including the lowered “V” along the center of the ceiling, keep the interior cozy and dim. You’ll find brass fireplace hoods in the shape of arrowheads at either end of the space: one mounted on a stone wall, the other flanked by floor-to-ceiling windows. The eatery, which is frequented by families, also has an outdoor patio where large groups can socialize over their meals.

Food: Foxy’s menu is a giant multi-page menu with photos of almost every dish and the cuisine, which is similar to Mexican. The breakfast plates from the southern border seem to be the most popular items as well as the best of all. Take, for example, Mexico’s Leaning Tower of Pisa: three corn tortillas with Spanish rice, black beans, and two easy eggs, topped with fiery ranchero sauce, avocado, and cheese. There are also shakes here, and while they’re thin and not as creamy as some of the other diner versions, it’s a decent note to end on.

Norms.
Atmosphere: The oldest surviving Norms family restaurant, this Googie icon has been greeting drivers along La Cienega since 1957. Although the interior has lost some of its luster, its defining features are still intact – bucket seats, sloping ceiling, and large zigzag windows. The car dealership-like exterior still impresses with its sharp pennant-shaped sign and cantilevered roofline. Although the restaurant has changed owners and feared demolition, the building’s future is secure thanks to its recent status as a historical and cultural monument.

Dining: When you sit down at one of Norms’ cozy booths, you can get four or five different menus – a multi-page full menu, a breakfast menu, a low-calorie menu, and sometimes a special menu detailing the diner’s baby back ribs selection, just for good measure. On weekdays from 4:00 to 14:00, a Bigger Better Breakfast is available for the commendable price of $6.59: two eggs, two links of sausage, two pieces of bacon, two hotcakes, brown pancakes, and grilled ham. That’s a significant spread, but nothing really stands out. To give it a little extra appeal, upgrade the brown fritters to a full version with bacon, cheddar cheese, green onions, diced tomatoes, and salsa. For those with a sweet tooth, a strawberry waffle might be more appealing, sagging under the weight of stewed berries and a generous dollop of whipped cream.

Panns
Atmosphere: While the themed building may be the most famous space-age building in Los Angeles, this 1958 diner is just as stunning. At Pann’s, everything is faceted: pyramidal lamps, diamond-shaped clocks and an irregular roofline. The same style extends to its extended patio and the small jungle that surrounds the exterior. The care that has been taken to keep this family-run restaurant in immaculate shape is evident in everything from the red and ruby booths and white bar stools to the perfectly preserved neon sign (with the nicest little ornaments in the form of flashing stars). Perhaps that’s why the clientele here is diverse: from regulars who have been dining here for decades to newcomers looking for some serious comfort food.

Food: When it comes to Pann’s menu, one item stands out above the rest: the fried chicken. Take one bite and your chin will be dripping with juice; two bites and you’ll be surprised at how crispy and well-seasoned the skin is. So for breakfast, you can choose to go the more traditional route – the classic breakfast plate consists of two eggs, nicely browned brownies, soft biscuits, and bacon – or you can opt for the fried chicken and waffles that many consider to be among the best in Los Angeles. Whatever you choose, make sure it comes with golden-colored fries flavored with Cajun spices. The list of specialty milkshakes includes a chocolate banana shake – creamy, rich and enough for two people.
